Flavored with garam masala,
a toasty spice blend that’s essential to Indian cuisine, masala oats
are the warming, savory start to a day you’ll find yourself craving
after one serving. We topped our masala oats with a nut and dried fruit
blend for a little flavor and texture contrast, along with a dollop of
creamy yogurt and fresh cilantro for brightness. We found a bowl of
these robustly flavorful oats to be wholly comforting and satisfying
as-is; however, if you want an extra punch of protein, an over-easy egg
would make a welcome addition.
Ingredients
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1 (15-oz.) can fire-roasted diced tomatoes
- 1 tablespoon garam masala seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cayenne pepper
- 2 1/2 cups water
- 2 cups uncooked old-fashioned regular rolled oats
- 2 tablespoons salted butter
- 1/2 cup plain whole-milk yogurt
- 1/2 cup chopped fruit-and-nut trail mix
- 1/2 cup chopped fresh cilantro leaves
How to Make It
Step 1
Heat olive oil in a medium saucepan over
medium-high. Add onion, and cook, stirring often, until tender, 5 to 6
minutes. Stir in fire-roasted tomatoes, masala seasoning, salt, and
cayenne pepper; cook, stirring often, until onions are very soft and
tomatoes are beginning to break up and soften, 5 to 6 minutes. Add 2 1/2
cups water; bring mixture to a boil. Add oats; stir until incorporated.
Reduce heat to medium; cook, stirring often, until all liquid has been
absorbed and oats are tender, 5 to 6 minutes. Add butter; stir until
melted.
Step 2
Divide oat mixture among 4 bowls. Top each evenly with yogurt, chopped trail mix, and cilantro. Serve hot.
