About Arbi Aur Patta Recipe: A nice change from the usual leafy vegetables that we make for lunch! Arbi or 'Colocasia' is a great summer vegetable that is versatile and can be made as both dry and gravy dish. In this recipe of Arbi Aur Patta, flattened arbi leaves are rolled in a besan mix, steamed and then fried while the arbi is sauteed with onion tomato along with spices and both are mixed well together. A different yet delicious lunch option specially curated by Indian Bistro as part of their Clay Pot festival.

Ingredients of Arbi Aur Patta

  • 200 Gram Arbi
  • 2 Arbi leaves
  • 25 Gram Besan
  • 20 Gram Green chilli
  • 10 Ml Refined oil
  • 100 Gram Tomato puree
  • 100 Gram Onion
  • 30 Gram Cashew paste
  • 50 Gram Yellow chilli powder
  • 50 Gram Red chilli powder
  • 2 Gram Turmeric powder
  • 2 Gram Garam masala
  • 5 Gram Jeera powder
  • 2 Gram Kasoori methi
  • 5 Gram Garlic, chopped
  • 2 Gram Whole jeera
  • 20 Gram Butter
  • 15 Gram Desi ghee
  • 20 Ml Cream (fresh)
  • To taste Salt
  • 1 Lemon
  • For garnishing Mint
  • 5 Gram Fresh coriander
  • 5 Gram Ginger

How to Make Arbi Aur Patta

  • 1.Take a medium size bowl. Make a batter with besan, salt and water and ginger garlic paste.
  • 2.Flatten the arbi leaf, apply the besan batter and roll.
  • 3.Steam for 4-5 minutes and cut into thin slices and shallow fry.
  • 4.Clean and boil the arbi, cut into half length wise and fry.
  • 5.In a pan, add half and half of oil and ghee.
  • 6.Saute whole jeera and garlic. Add chopped onion.
  • 7.Add tomato puree, haldi, yellow and red chili powder.
  • 8.Add cashew nut paste, jeera powder, kasoori meethi, butter and finish with cream and lemon juice.
  • 9.To this gravy add fried arbi and garnish with mint and coriander leaves.
